You just have to live this culinary experience. Chef Frachot's teams are taking great care, so that this moment is excellent!

When crossing the threshold, one enters into a sleek and modernist place, with well spaced tables so that each party feels in its own bubble. Colors are subdued, white, beige and brown. Clearly, we are not here to be impressed by the decorum. Each table has its own owl statuette, a symbol of Dijon, and white JL Coquet tableware whose curvy pattern matches that of the ceiling. Then, the show begins. Three rounds of appetizers like three rounds of drums. Some hesitancy in the rendering, the orchestra needs to settle. The époisse-based mousse is unctuous and delicate. The red beat and cherry mousse is more difficult to place. The quail egg en meurette introduces the chef’s leitmotives: rich and deep sauces like the rich and deep colors of Rembrandt’s paintings, multilayered, compounding a palette of hues into a distinctive and original style, and a dissonant explosion of tastes and textures, sweeping a wide spectrum with unexpected ripples, always on the verge of falling apart but always holding together, like the dissonant harmonies and orchestrations of Richard Strauss, seeking unchartered territories and opening new worlds. The “Emotions” menu is articulated into four movements: a girolles prelude, a sandre (pike perch) allegro, a volaille de Bresse andantino — a mint tea interlude, and a stunning desert finale. We added perfectly matured cheese as an intermission.

Best rooms best location, wonderfull and easy to find. Also not exspensive best value for money in europe.

(Restaurant) Very nice, friendly and professional service. Food was perfect. Very good taste and quality ingredients, perfectly cooked and combined for each dish. The cheese selection is huge and so delicious. (only one thing to complain — the aircon was too strong, too cold in the restaurant or maybe just at our table. They switched it off after a request but just for a while. )

The 2 Michelin-guided macaroons are worth it, and certainly when entering the red hat you know what to expect. Of course we are not disappointed, the perfect welcome, the intelligent and attentive service, the sommelier very friendly. As for the dishes it is really a treat, the awakening of the taste buds with each new dish. Certainly the prices charged are high, but excellence at once. If they have seen the value for money you can say that it is really good. Finally having seen myself behind the scenes of the restaurant, I can add that everything is done with attention and thinking of the customers we can only recommend this establishment.

Fantastic 3 night stay, staff were friendly, attentive service with smile particularly Michael. Hotel itself, lobby area, sauna and Spa along with bedroom was immaculately clean. Parking available but cost of €16 staff will park and bring the car as and when I needed it. Breakfast was continental so usual mix of pastries, cereal, cold meats etc, I did miss my English breakfast. It was fabulous hotel, highly recommended. Hotel also centrally located within Dijon all sightseeing, restaurants, bars and shops within 5 minutes or less walking distance.

Lovely and charming hotel in the heaet of Dijon! A 'by co-incidence' find and was exactly thed kind of hotel we like. Rates are very good too. Definitely very recommendable hotel!

Ideal location in the city centre of Dijon. Two steps from the pedestrian area and all the monuments. The rooms are spacious and decorated in a modern. The entire staff is friendly and attentive. The breakfast is to do! Valet parking more than useful because it is not easy to drive or park.

Eating here is the assurance of not being disappointed. So it's far from cheap, but we don't come here for that. We come above all to look for products of qualities subjugated by the talents of the chef. And on that side, you'll be served.
The setting is nice and worked.

I have not seen the wine list but, at worst, a sommelier is there to advise you.

I am fortunate to be able to go down to the Red Hat for my professional trips, it is a beautiful establishment. The rooms are beautiful, now equipped with an espresso machine (a little more appreciable). Breakfast is a real treat with high quality local products.

BEWARE! I left a gold and diamond necklace in my room; called a few hours after I left to inform them, on a Saturday. Was told to wait until Tuesday. Called them back on Tuesday to follow up. Was then informed that they hadn't found it. (I'm still incapable of believing this. I know exactly where it was. ) They kept telling me about other valuable objects they found and that, unfortunately, because they hadn't seen the necklace, they couldn't confirm that it was ever in the hotel to begin with. The woman at the front desk is more content to interrupt you than to help you. At the end of her vitriol I was in tears and she just said, "tant pis. " The woman is vicious. There's nothing hospitable about this place. Do yourself a favor and take your business elsewhere.

Nice hotel with very friendly staff. On the ground floor is a restaurant with 2 Michelin stars (from €50 per aisle) The rooms are very quiet, have a nice décor and are clean. Our rooms on the third floor are directly accessible by elevator. There is a valet parking for 16, €50, parking on the Staße is relatively expensive. You can also go to a car park yourself.

Nice and clean hotel, friendly staff and comfortable rooms (though rather cold in March). Only criticism was that the breakfast was terrible. No selection, a bit of cereal, some croissants, tea and coffee and a few cold cuts. For around €18 each I would recommend having the same in a nicer ambience in town and saving €10 each! We didn't eat in the restaurant which did look marvelous. Maybe next time. Overall a fair price for a nice hotel.

At the risk of being a little hard, I don't think catering deserves 2 Michelin macaroons. That said, the service is impeccable.

All very well. The rooms are very new. We have been with children and we have peoporcionado a room with room to part that is transformed into room. Ideal. The bathroom is very modern and comfortable. The staff is very nice and took us to the room the suitcases and explained how everything works. It is located right in the center. Walking is very nice city. They have parking service. They'll park it for you. Very comfortable to leave things in front of the hotel.

Superb location, perfect reception, very nice place, sublime cuisine (lots of sweetness in the dishes, subtle chords, perfect service), chords with remarkable wines and sometimes surprising, a valet service for simplicity. What better to say if not to go!

This is very nice, but maybe pricy. Nice rooms and just beside all stores, it gave us a great end of our France trip :)

The only two stars in Dijon. The presentation is neat the kitchen is at the height of its reputation. The valet service is very helpful in the centre of Dijon. If you do not appreciate something, they will change it by asking you what would make you happy. A good time to spend in this restaurant.

I appreciate hospitality and the friendliness of the staff, as well as rooms in the "design" that really changes standard rooms are well known hotel chains.
The breakfast could be improved especially fruit juices.

Only caveats: the TV work very badly because of insufficient network; the bed did not quilt (in November! ) ; no kettle in the room (on request) ; Finally insulation from one room to the other.
