Very nice atmosphere, excellent team, professional and friendly. Great cocktails and good selection of beers. What can we say about the music, the dj was just oustanding, great combination of rythmes and best attitude to make us dance for hours. Some friends recommended this place for a Salsa Tuesday Night and it was one of the best nights in a while, everybody looking for fun, dancing, meeting people, very respectful and caring. Thank you so much! We will go back! For those curious about salsa, this includes all levels, don't be shy and give it a go! You will also be amazed with the potential of some of the best dancers in the city!

Aggressive security applying arbitrary intoxication checks despite not yet ordering a drink and applying restrictive gendered dress coding despite my identifying as non binary. Very unsafe place for LGBTQIA+. Very upsetting experience.

Absolutely horrific service. Was turned away without a given reason. I was the designated driver for a night but was told I was too “intoxicated” to get in. Highly recommend attending another bar. Unfair service — best to go elsewhere.

Aggressive, unhelpful and condescending security guards, namely the man working on the 22/10/2019 at 8:30pm. This man was not solutions-focused nor was he in any way professional, but rather wanted to provide sarcasm and look down on other people. Security do not make you feel secure, the service is not prestigious in the slightest and ultimately encourages an individual to think: how can one person treat another person like this? Lowest of the low: Establishment Bar.

I am always love est. Until last night I had a bad experience with one of the guards. He called me “smart arse” when I explained I wasn’t drunk but I accidentally hit him while I was dancing. He just showed up from nowhere and I didn’t see him coming. I just had one drink after paid $25 to get in and spent 10 mins there before I got told to go outside. The guard has way too much authority and it’s not fair.

I just had one of the best meals of my life. Establishment does not let you down. Their Thai food is on par, if not better than most Thai restaurants I have been to. The service is great, you never wait too long and the food is amazing. Try the "Yum tua poo" 10/10

If you're a toser who likes paying $22 for a burger, $5 for a coke and 40 cents to use EFTPOS you'll love it.

Pretty poor showing by Establishment on my last visit. A group of 5 ordered starters and mains. Another colleague joined 20 minutes later and ordered independently. The joiners meal arrived first. Our mains appeared over a 10 minute period followed by the starters. 40 minute wait times are not OK in a pub. Food tasted good though.

We loved it. It was first time visit, good crowd and nice collection of songs. Overall it was great fun. Had a good time☺

A quick and easy location to get to for breakfast, lunch or after work drinks in the city. It does get busy after work so be prepared to wait quite a while for your drink (we had this on a few occasions but not an issue as it is a good atmoshpere and great location).

Beautiful venue serving a good range of options. Foods always consistently good. Venue is stunning, try and sit out the back if you can. The way the new building connects with the old is stunning.

Rude staff at the bar (mainly all young girls). $13 for a single shot! I was confident to can buy 2 double shots with a $50 note (one for me and one for a friend) but they ask me $52 which is ridiculous! I didn't wanna spent $52 so I told her I didn't have enough money (which was true) and I ask her to make it again single shot. She said "I already made them double shots, I can't make it again single shot" I could start to explain her about logic stuff but I would waste my time, so when she saw me going to another bartender she made sure they didn't serve me for that reason! Well, I may have not been served but you are the one who lost money!

I like this place for some after office fun in CBD, always people having a good time, service is good even when crazy crowded like latin night, Make sure you get there early…
The venue is lovely and elegant, yet the ambience is casual enough to go straight from the office, If you are not from here make sure you pass by and have a taste.

The location is fine but $75 for 6 Jägermeister shots is simply totally exaggerated, unjustified and withdrawn. I haven't seen that anywhere in the world!

If you don't you will be waiting till your funeral at the bar. Most bar tenders are female quiet young and good looking some of them dress like pro s with the things hanging out and flirting with corporate man and man who have money or buying few rounds. I have seen it with my own eye's. Plus there are few regulars hanging around during the week and of course doing few bar tenders. If you don't have fat wallet stay away from place. Cheers.

The place is fine but I had problem with the payment… the bartender said my card did not work and when I check my bank account to understand why… I discover that she charged me something that I didn’t have. So I called and they said me to send an email explaining… but they never answer the email… So I went to the place and the manager gave me another email… and no answer again… it is not so much money, but they could at least answer the email…

Nice place that attracts chic crowd. The food is good too. If you are into salsa, this is the place to be at in Sydney. But some nights they charge entry fee 20-25 dollars per person, so keep that in mind. Liqueur is decently priced, not too expensive.

Once you are lucky enough to get past the fortress gates, securely guarded, your night can only get better. Can be busy and take time to get served, however this place has a cool vibe and friendly atmosphere. Great place to unwind after work or enjoy pre dinner drinks with friends. There is so much more within Establishment to discover.

This hotel is absolutely ridiculous. Worst sleep of my life. Literally above a nightclub. Housekeeping letting themselves in pre 9am as well. Would NOT RECOMMEND for the price especially. No attention to detail. Poorly trained staff. Having an expensive property simply isn't enough.

So I don’t normally write reviews but I felt as though I had to in this case. A group of 10 of us from work went to the Establishment Bar for lunch. The majority of us ordered from the Thai menu which sounded amazing. The food looked and tasted great. A few hours after lunch we became sick — with symptoms of vomiting and diarrhea. We quickly concluded that this was a result of the lunch and in particular the seafood options on the menu. Fortunately, these effects didn’t last longer than 12 hours. This was very disappointing as the atmosphere, service and staff of The Establishment were excellent. Unfortunately, the quality of the ingredients let the whole experience down. In the future, I would think twice about returning.

Not made to feel comfortable by rude staff at all. Bar surface is different levels designed to spill your drinks and no compensation offered… very bad bar indeed. Do not recommend!

Awesome place, atmosphere, food and bar service, but the DJ last night (salsa) was really unfriendly when we tried to request a song (even being a latin song). It was quite unpleasant!

Last nite I have been to the ground floor bar for a drink. I have ordered a gyn and tonic and and a beer. With surprised this morning I have checked my statement and I found out I was charged $21.65 for it. Be careful when they charge you!

We had a great time here. Bar looks and feels the part. Bar staff all good looking and service great. Only visited Sydney briefly but really pleased.

Incredibly rude! Being kicked out after I have only had two wines for being "too drunk looking". Ridiculous club which should really look out for the "bouncers" it hires. I do not recommend this club at all after being treated like s**t although all I did was have a good time with my friends. And I paid $25 for the entry only! Look for other clubs! There are quite a few where you are treated like a human!

Great place for lunch. Self serve, so there is no wait. Wide and open spaces for lunch with very cool music to give good ambience to the restaurant. Absolutely loved the meal, had a Thai special dish of the day (wonderful) and the chocolate mousse (also to die for). The inside terrace is amazing with a sense of peace. They also have salsa nights! Without a doubt, one of the best places for a bite in the CBD.

Shocking door staff treating decent people like pieces of garbage, thanks for ruining our night. We will never be back.

Nice little watering hole. One of my many favourite places to enjoy a beer or a cocktail. Lots of room for groups.

Came here to treat my wife to a nice lunch. Great ambience and location, but I'm sad to say the food is sub-par. My wife ordered the tuna nicoise, which consisted of a few leaves of lettuce, a quarter tomato, a few slices of chat potato, half a boiled egg and tuna straight out of a can. Not good enough, Merivale. My Cajun chicken burger looked undercooked, so I went back to the kitchen to check with the chef. He proceeded to poke the meat with his fingers (no gloves) and told me it looks like that because of how it's marinated. At that point I lost my appetite. For the money paid, we were both very underwhelmed. Probably a great place to go for a drink, but I'd stay away from the food.

Great atmosphere with space to move around. A wide variety of professional people gather there wanting to engage with others. Eat in thr relaxed and air vonditioned "outdoor" feel of the Gin Garden with fusion of oriental and european favourites. Great music.

The most racist, discriminatory and ridiculous place in the world. Went there with my mates coming from Italy last night, I was wearing beige trousers a Ralph Loren striped shirt and a pair of white adidas leather shoes. Got in at 11:30pm having the middle eastern security guy checking us up to see if we were drunk and if we were wearing the proper clothes. He let's us in (5 of us, 1 girl and 4 guys) just to mention no one of us had anything to drink until that moment. We wait about 15 minutes to get a drink for the long queue 10 minutes to drink it. Me and 2 friends decide to go out and have a cigarette around 11:55 pm. Then we head back to the door at 12 am and the exact same security guy stops me from getting in because of my shoes, saying that because these are sneakers I can't get in, then takes a look at my 2 friends saying the same thing. I tell him that he let me in just 30 minutes ago, his reply is that they have a different policy after 10pm for what you are wearing and I tell him that he let me in at 11:30, no reply just stands his ground and doesn't let me in. My friend who had is wife in the bar starts an argument with him and asks to call the manager.

Good atmosphere in the afternoon, bit noisy afterwards. Strong after work crowd though and convenient for quick drinks.

Very modern hotel, fantastic rooms, and excellent service. Suffers slightly from street noise and club next door. No more than any other inner city hotel though.

Not my kind of scene generally, but was all good apart from expensiveness. Staff were really lovely and helpful, the bar and atrium area was quite pretty, and ironically because it was New Year's Eve it wasn't too busy either (no views, so everyone moved on fairly quickly). Drinks are quite expensive, ~$11 for a small spirit and soft drink, such as rum and coke or whatever, $17 for cocktails (again quite small). The bar food was tasty.

Good bar if you like trendy places and don't mind a crowd. Always a safe choice on a night out.

PLEASE READ THIS BEFORE YOU EVER STEP INTO THIS HORRIBLE PLACE… This place is the worst place to go for drink these days. Very poor and amateur management on Friday night and security staff are absolutely terrible. After a long time I came to this place to catch up and have a drink with my friend. After a short time a security staff who could barely speak English approach us and asked my friend to go with him to run some tests! what a JOKE! Tests? I trued to explain to him in a very polite way that he is picking a wrong person. But he was very aggressive. Obviously he did not like the cross I was wearing and he looked like middle eastern anyway. He took my friend away and after that he brought the manager to me and accused me that I criticized his decision. I explained the situation to the Manager and he told me who am I to judge the security guy's decision. He asked me to pay and leave. Of course I did without a question. They ruined my night. This is ridiculous, we go out to have fun after a ong week and we have to put up with this. Youi pay big money and asked to leave the place for no reason. Shame! I will never step into this place again and I spend my money somewhere else from now on. Guys enjoy your weekend somewhere else. Trust me. Stay away from this joint.

I was physically assaulted by the staff, abused by the manager and racially harassed and targeted. If you're ethnic or even just an assertive person who stands up for themselves instead of being submissive, NEVER go here! So, I was at the Establishment on a Saturday night. And literally 5 mins after paying my cover, I was told my a bouncer that I was showing signs of intoxication and had to leave. So I explained that I literally came in 5 mins ago and if I was showing signs of intoxication, why was I let in? And he says ok, you can stay. So after this harassment, I wanted to leave and at the door, I spoke to the girl taking payments about this. And while talking to her, she pushed my hand and then I pushed her back in order to protect myself. At this point, the bouncers let me and my friend out, and we were happy to leave. The manager was called and he was an absolutely dismissive prick who had no sense of how to talk to people. My friend and I were explaining the situation and all we wanted was an apology, which we did not get. He kept saying that he will have to check the footage and get back to us, but then mid conversation, he just walked away! He didn't even take our names or contact numbers to get back to us. It was just an empty offer! The way they treated us was absolutely despicable. It was obvious to me that they let people in and then kick them out straight away just to get cover charge.

I was unfairly treated by the staff in this establishment and I will never go here again. If you are black or non-Australian, think twice about going here. It is not a welcoming place and their staff made me feel unsafe and unfairly targeted.

Had a conference in the ballroom this week. It was substandard. Bathrooms were disgusting, mouldy and generally not clean. Food was tasteless, especially the fruit which was mostly soft and floury. The room itself was freezing, which isn't ideal on a Sydney Winters Day.

We were expecting a great night out but instead the security at the door decided to refuse entry to our friend for no reason whatsoever. After I asked why, he physically threatened me. I can't understand why establishment would hire such unprofessional and violent security staff. Completely disappointed.

Just called the Establishment Hotel to ask for room reservations. Whilst he couldnt accomodate my room needs, Simon was the most helpful person I've ever had the pleasure to speak to over the phone. He went above and beyond for me, gave me loads of advice. Simon from Establishment Hotel, you are a legend! Hope they give you a raise, you deserve it!

As long as you come here with a bunch of friends or colleagues, this is a great place to hang out. Nice atmosphere, good drinks, nice music, and plenty of drinks. What more do you need? The staff are awesome.

The Establishment is awesome on Tuesday night for Salsa night. It's better to go there when you already know how to dance because one teacher for 100 people is not enough If you prefer KeZumba you can go on Sunday.

This is a really good way to experience Sydney from a charming and funky room. Staff at Merivale / the front desk will organise entry to their best restaurants and bars that are notoriously difficult, such as Mr Wong. The room itself is a hideaway that has a warm and sultry feel. I really enjoyed staying here.

Establishment is a great space. It is classier than some other nightclubs in Sydney city and is able to set the perfect atmosphere for events like a 21st. They play a fantastic selection of music, predominantly RnB. There is comfortable furniture and a reliable cloakroom. Unfortunately, the space gets very busy on event nights and even if you've bought a ticket beforehand you still have to go to the back of the line behind people who don't yet have tickets.

Beautiful decor out the back, nice lights and friendly staff. Establishment has been there for years and is well known as a bit of a 'meat market'. Go upstairs to level 4 for a beautiful Japanese meal.

You have to be in the right mood for this place. If you're looking to nab yourself a guy/girl? it's a great place. If you just want a quiet drink with friends, not so much. It really is meat market central, it's like real life Tinder which is good if that's what you want, but if not then you do get to sit back and laugh at all the guys/girls doing laps around the bar trying to get noticed. Service can be slow and depends on how much you're tipping the bar staff. If you're a big tipper you'll have no issues.

I have only been here for one of their birthday parties, going with a food blogger friend of mine — it was amazing @__@ there were a million people there and they were serving free food and drinks with a Wolf of GeorgeStreet theme (so crazy-clad little dudes on tables and gold swim-wear donning girls scattered around~) hahaha~ was amazing~.

We stayed at the Establishment Hotel when we visited Sydney. We loved the design of the Hotel. Furthermore it is located very convenient (only a short walk to the Opera House) and the great district "the rocks". You'll find more about our travelogue on travelmemo-com.

Great for that quick drink after work with work mates or a client. A little expensive for a long night in or a week long bender. The atmoshere the sophisticated yet casual enough for conversation and a little hide away with someone special. A good place to impress or be impressed with. I Like it.

Funky rooms and boutique prices. Around 400 a night gets you a lovely room and great service right in the heart of the Sydney CBD. However. Depending on when you stay you will either get exposed through the bars to the drunk financial set and their hang a longs or private schools kids blowing daddies money and pretending to pimp it. But then again that is to be expected from any Hemmes venue.

My wife and I stayed here recently for five nights on a business trip. Our experience was excellent with outstanding service from everyone. We were wowed by their attention to detail including room details, requests and food. We had breakfast in the Gin Garden each morning and enjoyed the food. Nightly turndown service included chocolate chip cookies. We had a fire alarm during our stay and the staff on duty handled it very professionally and kept us updated. Couldn't have done it any better! The location is very good with easy access to train stations (Wynand and Circular Quay). Harbor and Botanical Gardens are within a few blocks. Overall, this is an excellent hotel with excellent service.
