I have loved my stay Auberge du balestie. Alex and Rachel are incredible hosts and will help you in any way they can. They're cooking is superb home cooking taken to another level. Tonight they introduced a new item on the menu, which was a Maigret de Canard that had been 'cooked' in salt for 72 hours. Somehow letting the duck rest in the sea salt for 72 hours cooks magret and it was superb. The evening ended with a delicious creme brulee, while overlooking the Reflections of the trees and the link below their property.
